ABOUT CANTINA DI SOAVE
Cantina di Soave was founded in 1898 and is one of Italy’s most prestigious and innovative wine producers today. With more than 6,000 hectares of vineyards, the winery not only boasts an impressive history, but exhibits a dynamism that is expressed in an internationally recognized award-winning wine portfolio.
The Borgo Rocca Sveva complex contains an experimental vineyard, set up in cooperation with the Institute for Experimentation in Conegliano Veneto. It is planted with some 50 clones of various white and red grapes varieties.
The distinctive feature of this experimental vineyard is that the vines are vertically-trellised, a method more usual in the plains, rather on a pergola, the system commonly used for the vineyards growing in hilly areas. Small quantities of wine are made from the grapes sourced from this vineyard, in order to assess the quality of the vineyard and to experiment with different blends of grapes.
Borgo Rocca Sveva is valuable place for study as well. A research centre carries out experiments in collaboration with the University of Verona, for its new degree course in Viticulture and Oenology, and with other oenological institutes, such as the Research Institute for Viticulture in Conegliano, which focuses on the conservation and improvement of native grapes and wines.
MEET THE WINEMAKER
Giancarlo Piubelli grew up in Soave. Both of his grandfathers were growers – one in Soave, the other in Valpolicella. So it seemed only natural that Giancarlo should gravitate toward winemaking, earning a degree in Viticulture and Enology in Conegliano, followed by studies in Winemaking Technology and Victiculture at the University of Verona. Stints as a wine analyst and cellar hand in Northern Italy and abroad expanded Giancarlo’s horizons, but he returned home in 2008 to work as a researcher at the University of Verona. In 2010 Giancarlo was recruited by Cantina di Soave to head up winemaking at its Rocca Sveva winery. There he has embraced the opportunity to research and experiment with the best grapes and some of the most cutting-edge technology in the area. Always looking to improve, this young, scientific winemaker is especially passionate about one of the more undefinable, sensual characteristics of wine: aroma.
RESERVE A VISIT
Since Borgo Rocca Sveva is a winery, it encourages close-up encounters with the world of wine, through wine tasting and guided tours of the underground cellars carved into the hill.
Once of its most spectacular features is in the fact these underground cellars, which maintain constant temperature and humidity year round; such conditions are ideal for aging and storage of our finest wines, which rest in large oak botti and smaller barrels. The underground cellars unfold in a fascinating gallery of caves that cover about 2,000 square metres in the rock formation beneath the medieval Castello di Soave.
Designed to comfortably accommodate groups of visitors, Borgo Rocca Sveva offers a unique guided tour that leads the visitor through all of the production stages, as well as a spacious wine shop with a tasting room and a retail centre, plus a small library where fine food and wine publications may be enjoyed by visitors.
