GRAPES: 100% Garganega
GROWING AREA: 50 homogeneous hectares in the Castelcerino cru. Vineyards are planted in medium-textured, gravel-clay soils, with southern exposure, at elevations of 100-350 metres.
HARVEST PERIOD: Beginning of October, picked exclusively by hand; the wine is made in the same day.
VINIFICATION & MATURATION: Cryomaceration for 24 hours in a bladder press, with gentle pressing, then gravity settling for 24-48 hours, inoculation of yeasts, fermentation at 14°C to preserve the fragrance and fruity aromas of the grapes. The wine starts maturation in stainless steel for 9 months, then spends an additional 3 months in the bottle.
SENSORY PROFILE:
APPEARANCE: Intense straw yellow with golden highlights.
BOUQUET: Elegant and fruity aroma of stark apple and quince, fresh almond, sage, with floral hints of acacia.
PALATE: Pleasantly crisp with a long progression. The finish shows impressions of fruit and blossoms, concluding on a pleasant note of almond.
PAIRINGS: Ideal with entrees, it goes well with appetizers, lighter meats and fish.
ALCOHOL: 13%
SERVING TEMPERATURE: Best enjoyed at 46⁰F.
